She may have grown up eating all kinds of canned foods, but Jinger Duggar is officially on her way to kicking those bad habits. Recently, the Counting On star has been all about a healthy lifestyle, and now her new recipe for “Making Food Monday” has our mouths watering. On Monday, August 12, she revealed to fans that she’d whipped up some eggs and veggies, and it actually looks super delicious. Not to mention the fact that it sounds nutritious AF.

“So many of you ask me what I eat on a daily basis,” Jinger, 25, wrote on the social media site. “I want to periodically share some of my all-time favorite meals [and] recipes! 🙌🏻 So … here we go! 😋 🍽” In the post, she directed fans on how to sauté kale with mushrooms and garlic and fry eggs with paprika, garlic powder, salt and pepper. We love how much seasoning she’s using!

So many of you ask me what I eat on a daily basis. I want to periodically share some of my all-time favorite meals & recipes! 🙌🏻 So….here we go! 😋 🍽 Meal Making Monday: • 2.5 cups of chopped kale • 1 cup of mushrooms • 1 tsp minced garlic • 1 tsp olive oil (or oil of choice) • 2 eggs • salt and pepper • paprika (optional) • garlic powder (optional) Directions: In a medium pan, Add olive oil, kale, mushrooms & minced garlic. Sauté for 2-3 minutes on medium heat until mushrooms are softened. Once done, transfer all to plate. Next, add 2 eggs to pan, sprinkle lightly with paprika, garlic power, salt & pepper to taste. Cook on low for 2-3 minutes and flip. Cook one additional minute. Add egg to plate with kale & mushrooms. Lately, the young mama has also been sharing how she meal preps to stay on top of her grocery game. “There are two types of people: 1) Those who prep all their fruits and veggies as soon as they get home from the store, [and] 2) Those who put it off as long as they possibly can!” she joked on her Instagram Story on August 7. “I used to put it off until I really needed it for a quick snack or meal … then I found myself, once again, putting it off for lack of time.”

Now, she’s making it a priority. “Having quick, healthy snacks on hand has really helped us stay on track with our clean eating goals,” she told fans. “No more procrastinating!” It seems like big sister Jill Duggar could take a few lessons. Though the mom of two has been stepping up her game with recipes for bone broth and stuffed zucchini, she’s still got a long way to go.
