With a combined tequila industry experience exceeding 90 years, their methods meld the best of the old with the best of the new. They utilize traditional slow-baking brick ovens and autoclaves to cook the blue agave hearts and traditional mills (molinos) to extract the thick honey sugar from the agave.
Next, it’s a slow fermentation process using naturally occurring yeast for 48-60 hours. This slower fermentation process produces a more full-bodied tequila with a deeper agave flavor. The fermented juice is then double-distilled using old fashioned “pot stills.”
